Great soup! Love the bit about foody bores. My father always used to say, if someone praised something with vegetables in it, "Yes, they're our own [insert veg name]" Pause. "We bought them." Confused people wonderfully.

When you think you have to throw out (fridge dated) either mushrooms or stilton. What a salvage job this soup makes.

On the other hand, you could fry the mushrooms, cover them with sour cream and spreadr them on some lightlt-toasted french bread which has been rubbed with garlic. It may not be a soup, but it's delicious!

Hi,

FYI I spent my adolescent years working on a mushroom farm for beer money etc. You're wry observation of the posh shitake and oyster mushrooms etc do indeed grow pretty much along side the regular cup mushrooms. They may sell for more £££ but believe me they're a bugger to pick!

I couldn't eat mushrooms for a couple of years after finishing at the farm but now I can and I prefer the big open flats, bbq'd with some garlic butter.

Will try this out next week but l like the fact that it seems so simple. I will forward it to my vegetarian daughter and see what she thinks of it.

I couldn't find a recipe in any of my cookery books and the dialogue is not usually so entertaining.

Thanks for the recipe
